Wintergreen mint is a peppermint cultivar selected for an unusually high concentration of compounds that mimic the wintergreen aroma — primarily methyl salicylate analogs and related esters — rather than the menthol that dominates standard peppermint. Actual wintergreen flavor (methyl salicylate) is the characteristic scent of Gaultheria procumbens, the low-growing native groundcover — but Mentha cultivars can develop similar aromatic profiles through different biosynthetic pathways.
